My Favorite Breakfast Tacos!!!!

One of my favorite breakfasts that looks as good as it tastes! The best thing about this recipe I've created is that you can go as basic or fancy as you'd like, even making it gluten-free or free of other things like dairy and meat using your preferred substitutes. I don't know about you, but I can eat potatoes with any meal. Whole, diced, sliced, whipped, you name it. Healthy Breakfast Bowls

Every once in a while, a breakfast bowl sounds appealing - especially in the winter!  I found this great link for some yummy ideas to try.  So far, I've made the sausage one that is awesome with chicken andouille sausage from Trader Joe's.  It gave the dish the flavor needed, since the use of herbs and other seasonings was minimal.  Also, I preferred to use coconut oil over ghee, but that's only because I had it on-hand.  I'm sure the ghee will also add a wonderful flavor, especially when com...

Now that the weather is cooling down, I couldn't resist trying out this yummy gluten-free, crustless quiche recipe I came across today here.  I haven't posted a new blog in a while, so I thought it was more than time to do so.

Cheesy Hash Brown Bake

After playing around with a few Pinterest recipes, I created this tasty little breakfast bake that you can easily make in larger quantities in order to fit into a 9x13 baking dish.  For this recipe, and because I am the only one who likes to eat it, I made it as a single-serving size, which works well if you want to treat yourself to something special any day of the week.

Homemade Belgian Waffles

Thanks to my aunt who married into a Flemish family, this Belgian waffle recipe is as authentic as it gets, and is one she has used many times. The results are great!

Here is the recipe (though I made my batch 1/4 of the amount called for, which yielded 4 medium to small waffles):

8 cups flour
4 eggs
2 cups butter
3 oz milk
22 oz sugar
1/8 tsp salt
1/8 tsp baking powder
Dash of vanilla extract
