Crustless Caprese Quiche

Now that the weather is cooling down, I couldn't resist trying out this yummy gluten-free, crustless quiche recipe I came across today here.  I haven't posted a new blog in a while, so I thought it was more than time to do so.

Today's breakfast was easy to whip up, because I had mostly everything on-hand - and I only made one serving so that I could enjoy it all by my lonesome.  However, in the absence of fresh basil, I substituted Italian seasoning, and it was still very good!  Isn't it pretty???  Just add a little hot-sauce, and you're good to go.  MMMMMM now that's what I call home-cooked goodness, easy style!  
 

Blueberry and Coconut Smoothie

Today is a hot summer day.  And I don't know about you, but when it's warm out, I don't feel like eating heavy foods.  So today for lunch, I opted for a smoothie made from ingredients I had in my pantry and fridge.  There are quite a few coconut smoothie pins on Pinterest, and here is what my Blueberry Coconut smoothie looks like!

Cheesy Hash Brown Bake

After playing around with a few Pinterest recipes, I created this tasty little breakfast bake that you can easily make in larger quantities in order to fit into a 9x13 baking dish.  For this recipe, and because I am the only one who likes to eat it, I made it as a single-serving size, which works well if you want to treat yourself to something special any day of the week.

Homemade Belgian Waffles

Thanks to my aunt who married into a Flemish family, this Belgian waffle recipe is as authentic as it gets, and is one she has used many times. The results are great!

Here is the recipe (though I made my batch 1/4 of the amount called for, which yielded 4 medium to small waffles):

8 cups flour
4 eggs
2 cups butter
3 oz milk
22 oz sugar
1/8 tsp salt
1/8 tsp baking powder
Dash of vanilla extract

Buttermilk Banana and Blueberry Bread

Try saying that ten times fast!  It's a mouthful, but tastes oh-so good!  I've made it three times now, since finding the recipe on pinterest.  It's a great way to use up ripe bananas and makes a great gift!  The only thing I did differently is to make one large loaf, rather than 3 individual ones, and it takes exactly 1 hour to bake.  You're welcome!

Strawberry Coffee Cake Muffins

I loooove this recipe!  Though, I have to admit, I've made it twice now and am still baffled on how to make the crumble on top to, well...crumble!  The flavors are great, but the topping is rather annoying; still, I'm not yet ready to admit defeat.  Here is how it turned out today (because when I made it the first time they didn't last long enough for me to take a pic!).

If you like any of the ingredients in the title alone, this is definitely worth looking at!  I came across this recipe while perusing light recipes to make while doing a modifed fast - that is to say, I'd planned on having SOMETHING in my stomach at all times, but with mostly fruits, veggies, nuts, and grains for 40 days.

I stumbled upon this delightful dish while searching for some raw lunch ideas on Pinterest. Why raw? So it can be eaten without reheating AND give me an enzyme boost.
