My Favorite Breakfast Tacos!!!!

Posted by -N. on Wednesday, April 22, 2020, In : breakfast
One of my favorite breakfasts that looks as good as it tastes! The best thing about this recipe I've created is that you can go as basic or fancy as you'd like, even making it gluten-free or free of other things like dairy and meat using your preferred substitutes. I hope you like them as much as I do. Comment below!

Stay Healthy with Turmeric

Posted by -N. on Thursday, March 19, 2020, In : beverages

There are plenty of Pinterest pins on turmeric tea. And now, more than ever with the Coronavirus as a constant threat to public health, it's worth talking about. Particularly because of turmeric's vast healing benefits.

Why Turmeric is So Good for You!
Turmeric and ginger are in the same family, which is why they are so similar when sold side-by-side at the grocery store in their root form.  But once you peel away the outer layer from each, you'll find that while ginger is a pale tinge of tan, ...

Chocolate-Dipped Oranges

Posted by N on Wednesday, January 25, 2017, In : snacks

I was never a fan of orange flavored chocolates, and I normally draw the line at marmalade or perhaps baked goods with orange zest in them.  But it seems that there is a huge calling for the stuff, as I experienced from my days of working briefly for Godiva Chocolatier.  People from other countries outside of the U.S. often came in during that Christmas season I was there, asking for orange chocolates.  Apparently there had been a Godiva favorite that had since been retired, much to customers...

Sriracha Chicken

Posted by N on Wednesday, January 18, 2017, In : finger foods

This recipe is brought to you by boredom and a tad bit of laziness on my part.  And when I saw that Sriracha sauce was a key ingredient, this chicken (the sauce in particular) was a must-try!  Lately, my daughter has been on a Sriracha kick, thanks to whatever blogger she follows who keeps recommending all kinds of fast food items and recipes to try using Sriracha sauce.  Ironically, when I had finished making dinner, she wasn't in the mood for something spicy, yet I was.  Go figure!  I took ...

Easy Crab Cakes

Posted by N on Sunday, January 15, 2017, In : appetizers

With last week's recipe being the crab dip, it made sense to find another recipe as a solution for leftover crab I still had on-hand.  This recipe for Old Bay Crab Cakes was easy to follow for being my first attempt ever for making crab cakes.  But thanks to all these recipes I've been making, I felt ready to give it a try, and I wasn't let down!

All it took were these ingredients:

Within minutes, everything was mixed and ready to broil!  They held together well throughout cooking.

I did ...

Joe's Crabshack Hot Crab Dip

Posted by N on Thursday, January 5, 2017, In : appetizers

Every year for the last 4 years, I've been following a method for plotting out my goals so that by year-end, I accomplish a whole lot more than "I should have done this" or "maybe I could have done this, if only..."  In fact, it's made me so productive that not only do I spend more time cooking and less cleaning, but I was able to write a book, spend time with my family and friends, and learn some new hobbies and skills!  One thing I hold to that I've yet to fully complete, though is my goal ...

Blueberry Jam Muffins

Posted by N on Thursday, December 29, 2016, In : breakfast

I know I've mentioned before how much I love blueberries, and so it was an extra-special treat for me to receive a jar of blueberry jam as a Christmas gift last week from a colleague.  As delicious it was to consider the possibilities on how to pair it with scones, toast, English muffins and the like, this recipe for Blueberry Jam Muffins was calling to me this morning.  And the end result certainly didn't disappoint!

To start, I gathered my ingredients and decided to cut the recipe to one-thi...

Make Oven Roasted Potatoes to Pair With Your Christmas Brunch

Posted by N on Friday, December 23, 2016, In : breakfast

PHOTO CREDITS: What's Good at Trader Joe's?

I don't know about you, but I can eat potatoes with any meal. Whole, diced, sliced, whipped, you name it. They can be as fancy or as casual as you'd like, and in of themselves they can be an entire meal (baked potato bar, anyone?).  Because of this, sometimes I like to make oven roasted potatoes because they are THAT GOOD with things like eggs, meats, and even cinnamon rolls and quick breads.

My favorite way to make them has been using this breakfas...

Greek Pasta Salad

Posted by N on Tuesday, April 12, 2016, In : Salads

Sometimes I just love going to Trader Joe's for inspiration from their samples.  Sometimes, they use some yummy standalone favorites, and other times they add a new dimension of flavor from some unlikely sources.  This week's awesomeness is brought to you by flavors I never would have merged of my own accord.  This one's a keeper, folks!  I give you the Greek Pasta Salad!

Exactly what's in this burst of mouth-watering freshness?  All you need are 1 pack of Trader Joe's Spinach Tortellini (fres...

Healthy Breakfast Bowls

Posted by N. on Saturday, February 6, 2016, In : breakfast

Every once in a while, a breakfast bowl sounds appealing - especially in the winter!  I found this great link for some yummy ideas to try.  So far, I've made the sausage one that is awesome with chicken andouille sausage from Trader Joe's.  It gave the dish the flavor needed, since the use of herbs and other seasonings was minimal.  Also, I preferred to use coconut oil over ghee, but that's only because I had it on-hand.  I'm sure the ghee will also add a wonderful flavor, especially when com...

Crustless Caprese Quiche

Posted by N on Wednesday, October 21, 2015, In : breakfast

Now that the weather is cooling down, I couldn't resist trying out this yummy gluten-free, crustless quiche recipe I came across today here.  I haven't posted a new blog in a while, so I thought it was more than time to do so.

Today's breakfast was easy to whip up, because I had mostly everything on-hand - and I only made one serving so that I could enjoy it all by my lonesome.  However, in the absence of fresh basil, I substituted Italian seasoning, and it was still very good!  Isn't it prett...

Blueberry and Coconut Smoothie

Posted by N on Tuesday, June 23, 2015, In : beverages

Today is a hot summer day.  And I don't know about you, but when it's warm out, I don't feel like eating heavy foods.  So today for lunch, I opted for a smoothie made from ingredients I had in my pantry and fridge.  There are quite a few coconut smoothie pins on Pinterest, and here is what my Blueberry Coconut smoothie looks like!

As you can see, it is thick and creamy.  That's because I actually had fewer berries on-hand and more coconut milk.  Works for me!  I also omitted the cinnamon, but ...

Cheesy Hash Brown Bake

Posted by N on Sunday, June 14, 2015, In : breakfast

After playing around with a few Pinterest recipes, I created this tasty little breakfast bake that you can easily make in larger quantities in order to fit into a 9x13 baking dish.  For this recipe, and because I am the only one who likes to eat it, I made it as a single-serving size, which works well if you want to treat yourself to something special any day of the week.

I usually like to add red peppers and bacon, but this time around I didn't have either, so I made it rather basic.  To make...

Waffle Fried Eggs and Naans: It's What's for Breakfast

Posted by N on Sunday, April 26, 2015, In : breakfast

Crazy title, right??  Well, this morning I decided to test out a fun way of making fried eggs without using a pan.  It all started when last month I came upon this pin on Pinterest: 23 Things You Can Cook in a Waffle Iron, and was intrigued.  And then I found this recipe for making mashed potato waffles and was blown away by how tasty and easy they were to make!  So today, I just had to cook some fried eggs.  Why not?

To get started, I took out my handy-dandy waffle iron, sprayed it, and let i...

Homemade Belgian Waffles

Posted by N on Thursday, April 23, 2015, In : sweet baked treats

Thanks to my aunt who married into a Flemish family, this Belgian waffle recipe is as authentic as it gets, and is one she has used many times. The results are great!

Here is the recipe (though I made my batch 1/4 of the amount called for, which yielded 4 medium to small waffles):

8 cups flour
4 eggs
2 cups butter
3 oz milk
22 oz sugar
1/8 tsp salt
1/8 tsp baking powder
Dash of vanilla extract

Combine ingredients and let it sit for 2 hours. Preheat waffle iron. Mix batter before adding to gr...

Buttermilk Banana and Blueberry Bread

Posted by N on Saturday, April 18, 2015, In : sweet baked treats

Try saying that ten times fast!  It's a mouthful, but tastes oh-so good!  I've made it three times now, since finding the recipe on pinterest.  It's a great way to use up ripe bananas and makes a great gift!  The only thing I did differently is to make one large loaf, rather than 3 individual ones, and it takes exactly 1 hour to bake.  You're welcome!

Strawberry Coffee Cake Muffins

Posted by N on Saturday, April 18, 2015, In : sweet baked treats

I loooove this recipe!  Though, I have to admit, I've made it twice now and am still baffled on how to make the crumble on top to, well...crumble!  The flavors are great, but the topping is rather annoying; still, I'm not yet ready to admit defeat.  Here is how it turned out today (because when I made it the first time they didn't last long enough for me to take a pic!).

No, they weren't undercooked - the gooey topping is just the melted brown sugar, rather than in crumb form.

Conversely, her...

Vegan Corn & Black Bean Chili with Quinoa

Posted by N. on Wednesday, January 7, 2015, In : game time foods

If you like any of the ingredients in the title alone, this is definitely worth looking at!  I came across this recipe while perusing light recipes to make while doing a modifed fast - that is to say, I'd planned on having SOMETHING in my stomach at all times, but with mostly fruits, veggies, nuts, and grains for 40 days.

The preparation process alone made me want to hurry up and finish cooking because the aromatics were driving me insane!  It all started with frying onions.  Who doesn't like...

Leftover Chicken Nachos

Posted by N. on Monday, December 29, 2014, In : game time foods

Today I felt like a brunch that was light and easy out of ingredients I already had in the house.  Leftover fried chicken is one of those things that can either be eaten up fast or stick around for days in my house, and I wasn't particularly in the mood for a salad.  In fact, I wanted something warm and spicy.  Soooo I took a look at Pinterest first and found this recipe for BBQ chicken taquitos using leftover chicken.  Sadly, I didn't have tortillas.  However, I DID have tortilla chips.  And...

Brown Rice & Black Bean Salad

Posted by N on Sunday, July 13, 2014, In : Salads

I stumbled upon this delightful dish while searching for some raw lunch ideas on Pinterest. Why raw? So it can be eaten without reheating AND give me an enzyme boost. As a huge believer in the benefits of enzyme therapy, it never hurts to find ways to incorporate as many raw forms of veggies, fruits, and grains whenever possible. NOTE: the brown rice and black beans are actually cooked ahead of time, but they taste great cold in this salad alongside the other raw ingredients.  At the last min...
