
I stumbled upon this delightful dish while searching for some raw lunch ideas on Pinterest. Why raw? So it can be eaten without reheating AND give me an enzyme boost. As a huge believer in the benefits of enzyme therapy, it never hurts to find ways to incorporate as many raw forms of veggies, fruits, and grains whenever possible. NOTE: the brown rice and black beans are actually cooked ahead of time, but they taste great cold in this salad alongside the other raw ingredients. At the last minute, I added leftover baked chicken for extra protein, but of course this is optional to do.
