
Today is a hot summer day. And I don't know about you, but when it's warm out, I don't feel like eating heavy foods. So today for lunch, I opted for a smoothie made from ingredients I had in my pantry and fridge. There are quite a few
coconut smoothie pins on Pinterest, and here is what my
Blueberry Coconut smoothie looks like!
As you can see, it is thick and creamy. That's because I actually had fewer berries on-hand and more coconut milk. Works for me! I also omitted the cinnamon, but added it later to see which way I preferred it better. Honestly, I could go either way.
On a side note, my blender is slowly dying. Anyone have recommendations on which one to buy next???? Feel free to leave your suggestions below. Thanks!
