Crazy title, right??  Well, this morning I decided to test out a fun way of making fried eggs without using a pan.  It all started when last month I came upon this pin on Pinterest: 23 Things You Can Cook in a Waffle Iron, and was intrigued.  And then I found this recipe for making mashed potato waffles and was blown away by how tasty and easy they were to make!  So today, I just had to cook some fried eggs.  Why not?

Homemade Belgian Waffles

Thanks to my aunt who married into a Flemish family, this Belgian waffle recipe is as authentic as it gets, and is one she has used many times. The results are great!

Here is the recipe (though I made my batch 1/4 of the amount called for, which yielded 4 medium to small waffles):

8 cups flour
4 eggs
2 cups butter
3 oz milk
22 oz sugar
1/8 tsp salt
1/8 tsp baking powder
Dash of vanilla extract

Buttermilk Banana and Blueberry Bread

Try saying that ten times fast!  It's a mouthful, but tastes oh-so good!  I've made it three times now, since finding the recipe on pinterest.  It's a great way to use up ripe bananas and makes a great gift!  The only thing I did differently is to make one large loaf, rather than 3 individual ones, and it takes exactly 1 hour to bake.  You're welcome!

Strawberry Coffee Cake Muffins

I loooove this recipe!  Though, I have to admit, I've made it twice now and am still baffled on how to make the crumble on top to, well...crumble!  The flavors are great, but the topping is rather annoying; still, I'm not yet ready to admit defeat.  Here is how it turned out today (because when I made it the first time they didn't last long enough for me to take a pic!).
